Do you have a hard time getting your kids to eat fermented foods? I’ve got good news for you, it doesn’t have to be a struggle. These watermelon kefir popsicles will have your kids begging for probiotics, literally! The best part, they don’t have any food dyes, refined sugar, or things you can’t pronounce in them. Try finding something like that at the grocery store…I’ll wait.

These watermelon kefir popsicles aren’t just for the kids. I personally feel that no summer is complete without icy treats like these to cool me down. It’s nice to have a go-to healthy treat that doesn’t contain heaps of sugar for those of you who are trying to make healthier choices, too.

Things you will need:

  • Popsicle molds (ice cube trays work fine too if you don’t have one)
  • Popsicle sticks
  • A blender
  • Fermented Kefir water (click for recipe)
  • Agave nectar or honey
  • Fresh watermelon
  • Limes

How to Pick the Best Watermelon:

Picking the right watermelon is key to making quality popsicles. Here are a few tips on what to look for when you do your shopping:

Shape: Look for a watermelon that is symmetrical in the shape and is free of cuts and dents. The uneven shape may indicate that watering was inconsistent or it was not properly pollinated.

Color: Pick a watermelon that has a large yellow spot on one side, also known as a field spot. As a result, you will have a watermelon that is juicy and sweet. Steer clear of watermelons with a white spot, it will likely be lacking flavor.

Weight: A juicy watermelon will feel heavier than it looks.

Sound: Knock or tap on the watermelon and listen for a deep full sound. If it sounds more hollow or dull, put it back because it’s not quite ripe enough.

Texture: Pick a watermelon that has lots of brown spots on its surface. This indicates that it was pollinated multiple times and will be extra sweet.

Watermelon Water Kefir Popsicles

Watermelon popsicles with water kefir for an extra dose of probiotics

Ingredients

  • 4 C Diced Watermelon Pulp
  • 2 Limes (juiced)
  • 1/4 Agave Nectar or Honey
  • 1 C Fermented Kefir Water

Instructions

Ferment some kefir water.

Place all ingredients in the blender and puree until smooth and blended.

Pour into popsicle molds.

Insert popsicle sticks and freeze for at least 4 hours, and enjoy.
